Pecan Date Balls (dairy-free)

Not to brag, but everyone I share these pecan date balls with digs 'em. The crazy part is that they're so simple to throw together. Literally, you throw the ingredients together in a blender.

Satisfies a sugar craving and gives a burst of quick energy. However, they're a steady bite from the healthy fats of pecans and functional properties of Medjool dates. Dates are also considered a LGI food because of their high fiber content, read more about their functionality on Spoon University.

Ingredients

  • 12 Medjool dates, pitted and pieced

  • 2/3 cup sprouted pecans, lightly toasted

  • 1 1/2 teaspoons vanilla extract

  • pinch of salt

Method

I nearly always have toasted pecans on hand as they're a favorite snack of mine. If you're in need of some though simply toast raw pecans in the oven at 350°F for 10 minutes.

Blend pecans in a high-speed blender until chunky but not quite yet a nut butter. Add Medjool dates, blend until the majority of the date pieces become a paste.

Add vanilla extract and salt at this point. You may need to use a tamper during this process as the dough will be thick and sticky.

Portion each ball into approximately 1 tablespoon of dough, rolling into a ball between your hands. Keep refrigerated.
