Pitaya Cauliflower Smoothie Bowl

It's hard to believe a fruit can be this saturated in color. Pitaya is not by any means easy to track down, but I had the opportunity to grab some organic puréed packs of it. Local and seasonal? No, but making your own rules means room for exploration of ingredients. Pitaya is another name for dragon fruit. The white flesh variety is more readily available fresh, but this red flesh variety is more nutrient dense. The flavor is more subtle than its color, and it's not high in sugar making it perfect for a smoothie bowl that already aims to lower the sugar using frozen cauliflower.

Ingredients

  • 1 unsweetened pitaya smoothie pack

  • 1/2 cup almond milk

  • 1/3 of a frozen banana

  • 1 cup frozen cauliflower

  • 1 teaspoon vanilla extract

  • 2 scoops collagen peptides or protein powder of choice

  • optional: toppings, any herbs or supplements

    • this included 1/2 teaspoon reishi and 1 teaspoon green adaptogen, grain free granola, sprouted almond butter, and sprouted pepitas

Method

Blend all ingredients (including herbs/supplements) until smooth. You will likely have to use a tamper or scrape with a spatula as this should come out the consistency of soft serve ice cream. Transfer to a bowl and add toppings if desired.
