Like I explained in my post A Nutritionist’s Take on Peanut Butter, the health world has mixed reviews on America’s prized legume.
Start by buying your own organic valencia peanuts in bulk online. I buy 5lbs at a time for $16 from Azure Standard and make my own peanut butter in my food processor or high-speed blender.
3 cups raw organic valencia peanuts
1 teaspoon celtic sea salt
optional: 2 - 4 tablespoons raw honey
Preheat the oven to 325°F, and spread raw peanuts onto a baking sheet.
Roast for 25 - 30 minutes until fragrant and light brown.
Place roasted peanuts and celtic sea salt into a food processor or high-speed blender, blend until smooth and glossy. Add raw honey at this point if using to sweeten.
If you want crunchy peanut butter, reserve 1/2 cup of the roasted peanuts and pulse a few times with smooth peanut butter once that is complete.
Favorite way to enjoy some good homemade PB: on a piece of my gluten-free banana bread with raw honey and flakey sea salt.
